Glucose, fructose and dextrose: the sugars that are split out of corn starch

Corn starch is a chain of glucose units, and breaking that chain is how a bag of corn becomes a bag of sugar. What hydrolysis actually does to a starch chain
Hydrolysis is the addition of water at the bonds that hold the glucose units together. Starch is a long string of glucose molecules linked end to end, and those links are what give starch its thickness, its body, and its inability to taste sweet. Add water and a little heat or an enzyme, and the links begin to snap. Break a few and the chain is shorter, still thick; break most of them and the mixture thins and starts to taste sweet; break all of them and every unit is loose on its own.
The word for a loose single glucose unit in this context is dextrose. Manufacturers use that term because it names the specific form of glucose the process yields, a molecule that rotates light to the right, and because it reads as a distinct ingredient on a panel rather than the generic word sugar. This is the basic conversion of starch to simple sugars, the step behind starch syrup, and the reason the same process that makes liquid sweeteners can be stopped at different points to make solids, syrups or powders.
Isomerisation, or swapping one shape for another
Glucose and fructose are not the same molecule with a different name. They are isomers, which means they share the same chemical formula but arrange their atoms differently. Isomerisation is the trick of adding an enzyme that loosens the atoms enough to let them reshuffle into the other shape. A syrup that was pure glucose becomes a blend of glucose and fructose without any extra sugar being added.
Push that process far enough and you get a product that is around half fructose, which is why so many industrial syrups carry a number on the label. The number is not a price and not a grade; it is roughly the share of fructose in the mix, and it exists because corn syrup on its own is not sweet enough for some drinks and baked goods. Where does the corn in the syrup actually grow?

Is glucose the same thing as dextrose?
For a shopper, yes: dextrose is glucose in one of its solid forms. A glucose molecule and a dextrose molecule are the same molecule. The two words are used differently on packaging. Glucose tends to appear as a syrup or a general sweetness claim, while dextrose appears as a dry powder, often in baked goods, in sport drinks and in medications where a fast-absorbing sugar is wanted. Dextrose is also the sugar that appears in hospital intravenous fluids, a use that families reading labels for corn allergy need to know about because it is not labelled as corn.
How the three differ in the body
Glucose is the sugar the body already runs on, so it can be absorbed and used almost immediately. Fructose has to be processed by the liver first, which is why it does not spike blood sugar as sharply but also why large amounts are treated differently by nutritionists. Dextrose behaves like glucose once dissolved and is often chosen for that reason in medical and sports products. None of these differences changes whether a product contains corn, and for a household avoiding corn the relevant question is not which sugar is healthier but which sugar came from corn starch.
Reading these words on a Canadian label
Canadian ingredient lists are regulated by the Canadian Food Inspection Agency and Health Canada, and the label for allergens and gluten sources is mandatory there. Corn is not a priority allergen in Canada. That means a corn derivative can appear under a name that gives no hint of its origin, and dextrose, glucose, glucose-fructose and glucose solids are all legal, clear words that do not mention corn. Parents who call a manufacturer sometimes find that the dextrose in a product is derived from corn, sometimes from wheat, and sometimes the answer changes with the supplier.
What these sugars look like in an ingredient list
Ingredient names do not follow the chemistry. A drink may list glucose-fructose, a soup may list glucose solids, a cookie may list dextrose, and a cough syrup may list liquid glucose, and every one of them may be corn. Which product categories to check first

Turn the package over and read the ingredient list before anything else. When you see dextrose, glucose, glucose-fructose or glucose solids, treat the product as a possible corn source and contact the manufacturer with a specific question: is the sugar derived from corn, and is it produced on a line that also handles corn starch? Ask for the answer in writing. Keep a note of the brands that answer clearly and the ones that do not, because the answer can change when a supplier changes, and in Canada the label is not required to tell you.
